Baked Stuffed Zucchini- YUM! YUM!
Since, Abby is not loving whole milk, I am trying to be creative about adding more vegetables into our family's diet. Here's a zucchini recipe I tried out tonight. It was delicious! Jon and I loved it, but Caleb and Abby didn't go for it. But, they will be seeing it on their plates again. I've read it can take 5, 10, or even 15 tries before kids will try a new food. Okay, now for the recipe!
Baked Stuffed Zucchini
Ingredients:
2 Zucchini (cut into halves lengthwise)
2 garlic cloves, minced
egg, slightly beaten
1/2 cup of Italian bread crumbs
salt
pepper
1/4 cup of Parmesan cheese, shredded (I used Romano, because it was in the fridge already.)
Scoop out the middle of the zucchini until the shell is about 3/8 of an inch thick. Steam the shells cut side down for five minutes. Meanwhile, chop up the spooned out zucchini roughly. Saute the chopped zucchini and garlic in 2 teaspoons of olive oil for a few minutes. (The recipe also called for chopped onion to be sauted too, but we didn't have any. I will try that next time.) Remove and combine with remaining ingredients in a bowl. Place mixture into zucchini shells in a glass baking pan. Drizzle the top with olive oil. Pour 1/8 an inch of water in the pan. Cook at 400 for 30 minutes or until the tops have browned. Enjoy.

Abby at 1 year old
Abby is one! It is amazing how much of a delight she has been since she got over being sick. She is suddenly more interested in playing with her toys. For her birthday, she got a little toddler car, and she loves to sit on it and be pushed down the hall while the music plays on it. She shrieks with laughter. Then Caleb gets a turn doing the same thing, and Abby bounces up and down as he comes back towards her. In public, Abby is a fairly serious child, but at home she seems to feel all emotion more intensely than the rest of us. She tends to be really happy or really mad, and her mood can change in half of a second if she is not getting her way. I have already seen her throwing herself on the ground and having a little crying fit if she doesn’t get what she wants. We will see how this develops in the next year! Abby is standing on her own and has taken a few steps by herself. But, she is quite timid about walking. I walked at 12 ½ months, and Caleb walked around 13 months. We know she is strong enough to do it because she can carefully and slowly lower herself down to a sitting position from standing. I guess she just needs to build up the confidence! Abby loves to eat, and it seems that we spend all day having mealtime and snack time and then cleaning up afterwards! Abby’s current favorite food is bread. Check out how Abby’s hair is starting to hang out past her headband. Isn’t it precious? I love our precious one year old!

Abby Update


After more than a week of being a very sick baby girl, Abby is finally feeling better! In the past week, she has had pink eye, a cold, an ear infection with a fever, and the stomach bug. She vomited for eight days in a row, and we were really starting to worry about what could be wrong with her. However, she is finally on the mend! It has been so nice to see her laughing and playing. In the top picture, she thought she was hilarious sitting in the dog's food bowl. In the bottom picture, she is enjoying time on her birthday present.

Sunshine
After being cooped up inside because of sickness and rainy cold weather, we were all very excited to head out to play in the sun-filled driveway. 
At this point, all documentation of the events ceased, so the photographer could rescue a certain little sister from a certain big brother, who is still learning about sharing.
And we are happy to report that she survived quite glowingly!
